The fish is steamed in supreme chicken stock, resulting in a gently-flavoured dish typical of Jiangnan cuisine. The fish is tender and sweet and while it's given a final hot oil treatment, it doesn't taste oily at all. The restaurants in China use Yangtze white fish but it's not feasible to ship that here, so we will get Patin fish instead.
